You'll be glad to hear that those invisible horses in Red Dead Redemption's multiplayer modes are in fact a glitch, and not some pre-order perk you missed out on. To put things back in order, Rockstar Games has released a new patch:

This fix addresses a specific issue that was found where the player's multiplayer avatar, their horse or their weapons would occasionally not be visible in multiplayer games as well as an issue that some players were experiencing where they would lose connection to the various multiplayer modes.

To patch up then, simply sign into Xbox LIVE. Just like you would if you were playing multiplayer, actually. Giddy up!
